Herbal Apricot Mint Tea
Overview
Cooling and refreshing! Cardamom sparks the digestive fire, agni, to get ready for digestion. While mint and apricot chill out fiery pitta. Which makes this great for summer! Enjoy with your favorite people at your next potluck. Try adding sparkling water for some effervescence. Cheers!

Ingredients
10 cups distilled water
1 bunch of fresh mint
7 cardamom pods, lightly toasted
5 limes, juiced
3/4 liter of apricot nectar
the peel of 1 orange
STEP ONE
Combine all ingredients with the exception of the apricot nectar. Bring to boil and simmer for 5 minutes. Allow to cool; strain out solid ingredients and pour tea into your serving vessel.
STEP TWO
Add apricot nectar to your desired sweetness; and serve!
Oh My Ojas! Treats
8oz dried apricots
8oz dried prunes
8oz dried dates
1.5 c pumpkin seeds
1.5 c sunflower seeds
1/4 c ghee
1 oz sesame seeds, divided
1 tsp ground green cardamom
Zest of an orange
Nice pinch of Himalayan salt
1: Bring 2 qt of water to a boil. Remove from heat and pour over the dried fruit. Let sit for 5-10 minutes or until they have become soft and plump.
2: Toast pumpkin seeds lightly; set aside and allow to cool.
3: Separately, process the seeds to your desired consistency. Reserving some sesame seeds whole for garnish. I processed all of them until they were fine ground.
4: Combine the seeds together along with the cardamom, zest and salt.
5: Process the dried fruit along with the ghee and transfer into a large bowl.
6: Gently fold the seed mixture into the fruit.
7: Once combined, transfer into a greased 9x13 pan and sprinkle the remaining sesame seeds.
8: Cut into bars and enjoy!!
